Somali Halwa #1

7 cups sugar 2 liters water (take out 1 cup and set aside) 3 tea bags 1 1/4 cup cornstarch 1 cup butter 1 1/2 ts. cardamom powder 2 - 3 ts. nutmeg 6 Tbsp. oil

1. Soak the tea bags in the cup of water; set aside for 15 minutes. 2. Combine the remaining water, sugar, and cornstarch; stir well. 3. Once the sugar and cornstarch are well mixed; turn up the heat to medium - high (7 or 8) and add the tea. (Remove the teabags.) 4. Do not stir until it thickens. 5. In a small bowl, mix 2 Tbsp. oil with the cardamom and nutmeg. 6. Stir halwa every two minutes until it has thickened a bit. 7. Add the remaining 4 Tbsp. of oil and stir well. 8. Add the butter a little at a time, mixing in between. 9. Keep stirring mixture until it is very thick; add the oil and cardamom mixture. 10. Keep stirring until it is too difficult to stir the halwa. 11. Pour the halwa into a grease pan; cover with plastic wrap and set aside to cool. This takes about an hour and a half to make. Enjoy!

Macaroni Bake

3 cups ready made beef pasta sauce 500 gr macaroni pasta 2 cups mozzarella; shredded 1 Tbsp. basil 1. Cook the pasta according to package; drain. 2. Mix the pasta sauce with the macaroni. 3. Pour into an oven proof baking dish. 4. Top with cheese and sprinkle basil over the top. 5. Bake at 350 degrees for 30 minutes. 6. Uncover and broil for 2 minutes or until the top is golden.

Goat Stew (Hilib Ari)

2 Tbsp. oil 1 onion; chopped 2 lbs goat; cut into large pieces and boiled for about 2 hours 9 roma tomatoes; chopped into large pieces 1 Tbsp. lemon juice 3 Tbsp basil 7 new potatoes (Whole) or 2 lg. potatoes; peeled and cut into large pieces 1 lg. carrots; peeled and cut into 1 inch pieces 2 ts. garlic; crushed 1/2 ts. cumin 1/2 ts. coriander salt and pepper to taste 1. Heat the oil in a pot; add the onions and cook until translucent. 2. Add the boiled goat, tomatoes, salt, pepper, and lemon juice; cover and simmer for 30 minutes. 3. Add the basil, potatoes, and carrots; cover and simmer until the potatoes are tender. 4. Add the garlic, cumin, and coriander; simmer for 2 minutes.

This dish was simply delicious. The sabayah were light and fluffy and the sauce was yummy.

This halwa is the most popular Somali dessert. The orange color comes from a mix of yellow food coloring and the nutmeg. You can make it with peanuts or without. CAUTION* EATING TOO MUCH CAN CAUSE A RAPID INCREASE IN YOUR WEIGHT!!

This deep brown version of Somali halwa is great. The color comes from the addition of tea instead of water an orange food coloring.

Who needs takeout when you can make something like this at home. I like thick crust so I used a 10 inch cake pan. I also made sticky chicken wings. These were so good that I will NEVER order wings again.

This yummy dish is made of ripe tomatoes, sweet onions, and crunchy okra. It was served with muuffo that has been made with corn flour instead of regular white flour.

Seafood Rotini

This pasta is one of the easiest dishes to make. By the time the pasta is finished cooking the meal is done. I usually make this when I am not feeling well because it is so easy.

Somali Rice with Raisins and Onion Garnish served with Sweet Sukkhar and Fried Potatoes

This is enough for a family of 7. It can easily be halved.


3 cups of white basmati rice; rinsed until liquid is clear
1/4 cup of oil
1 onion; sliced
3 chicken cubes
4 cardamom pods
4 cloves
1 cinnamon stick
4 cups chicken stock (a little more might be needed)

1. Heat the oil in a flat bottomed pot.
2. Add onions, chicken cubes, cardamom, cloves, and cinnamon; saute until the onion are
3. Stir in the rice and the chicken stock; cover and bring to a boil.
4. Reduce heat and cook until the rice is tender. This can take between 15 - 20 minutes.
5. Fluff with a fork.


1 small onion; sliced
1/4 cup of raisins (I like to mix light colored raisins with dark one.)
1 Tb. ghee (clarified butter)

1. Melt the ghee over medium heat.
2. Add the onion and fry for 1 minute.
3. Add the raisins and cook for 1 minute.
4. Spoon the onion/raisin mixture over the rice.

This is another dish that we frequently have for breakfast. This can be served with pita bread or anjera. You will also notice that I used a lot of olive oil for this dish. My husband loves olive oil and thinks it is healthy for him. Also it stretches out the meal since we are a family of 7. You can use to your liking.
