2 Tbsp. oil
1 onion; chopped
2 lbs goat; cut into large pieces and boiled for about 2 hours
9 roma tomatoes; chopped into large pieces
1 Tbsp. lemon juice
3 Tbsp basil
7 new potatoes (Whole) or 2 lg. potatoes; peeled and cut into large pieces
1 lg. carrots; peeled and cut into 1 inch pieces
2 ts. garlic; crushed
1/2 ts. cumin
1/2 ts. coriander
salt and pepper to taste
1. Heat the oil in a pot; add the onions and cook until translucent.
2. Add the boiled goat, tomatoes, salt, pepper, and lemon juice; cover and simmer for 30
3. Add the basil, potatoes, and carrots; cover and simmer until the potatoes are tender.
4. Add the garlic, cumin, and coriander; simmer for 2 minutes.
