Zucchini Fritters
1 large zucchini; grated
1 sm. onion; finely chopped
1 clove of garlic; minced
3 eggs
1/2 cup of freshly grated parmesan cheese
1 cup of milk
1 1/2 cups of all purpose flour

1/2 cup self-raising flour
1/4 tsp of salt
1/4 tsp of black pepper
1/2 cup of vegetable oil
1. Mix zucchini, onions, garlic, eggs, cheese, milk, flour, salt and pepper in a large bowl.
2. Mix well into a batter.
3. In a large pan heat the vegetable oil.
4. With a large spoon carefully drop some batter into the pan.
5. Flatten them out like a pancake only thicker.
6. Fry on both sides until golden brown.
7. Place fritters on a paper towel to drain the excess oil.
