1 cup corn
1 Tbsp. chives
1/2 cup cooked shrimp; chopped
1 egg; separated
2 Tbsp. flour
1/4 ts. salt
1/4 ts. pepper
1. Combine the corn, chives, shrimp, salt, pepper, and the egg yolk in a bowl.
2. Beat the egg white until frothy; fold into the corn mixture.
3. Add the four and stir.
4. Drop spoonfuls into hot oil.
5. Remove with a slotted spoon and drain on paper towels.
