Quaker Soup

1 med. onion; chopped
2 Tbsp. oil
1 Tbsp. garlic; minced
1 Tbsp. tomato paste
1 tomato, diced
1 Tbsp. cumin
3/4 cup quick cooking oatmeal
5 cups water
1 chicken cube
salt and pepper

1. Heat the oil in a pot; dd the onion and cook until translucent.
2. Add the garlic, tomato paste, tomato, chicken cube, and cumin; simmer for 2 minutes.
3. Add the oatmeal and bring to a boil.
4. Reduce heat and simmer covered for 20 - 25 minutes.

NOTE: I love this during Ramadan. I find it also tastes really great with a little lemon.

  1. This is exactly what my dh's family cook for iftar; both here and in Saudi they call it Shorba which just means soup; you can also add frozen mixed veggies or small pieces of meat....
