Potato Garnish
1 onion; sliced
6 baby potatoes; sliced
1/8 cup raisins
2 Tbsp. ghee
orange and yellow food coloring
1. Put the potatoes in a bowl with the food coloring; cover with cold water and let soak.
2. Put the sliced onion in a ziplock bag with the food coloring and 1 tablespoon on water; let soak.
3. Heat the ghee in a pan; add the potatoes (drain before using) and cook until tender.
4. Add the onions and the raisins and stir fry for 1 minute.
5. Serve over Somali rice.

ReplyDeleteI am sooooooo happy to find your blogs this ramadan, masha'Allah. May Allah bless you greatly, ameen. I plan to use alot of your recipes insha'Allah. Question, how long do you allow the potatoes to soak with the food color? And do you use the food color instead of the saffron?

I don't use saffron. Food coloring is so much cheaper. The longer it soaks the darker it will be.

ReplyDeletethis was really good. i let the onions and potatoes soak about 30 minutes are so. the only thing i added was some salt and garlic powder and pepper, and i did this while it cooked.
i put the potatoes around the somalian rice (your recipes) and used the onions and raisings for the garnish on top of the somalian rice.
