Potato Garnish

1 onion; sliced
6 baby potatoes; sliced
1/8 cup raisins
2 Tbsp. ghee
orange and yellow food coloring

1. Put the potatoes in a bowl with the food coloring; cover with cold water and let soak.
2. Put the sliced onion in a ziplock bag with the food coloring and 1 tablespoon on water; let soak.
3. Heat the ghee in a pan; add the potatoes (drain before using) and cook until tender.
4. Add the onions and the raisins and stir fry for 1 minute.
5. Serve over Somali rice.

  2. I don't use saffron. Food coloring is so much cheaper. The longer it soaks the darker it will be.

    this was really good. i let the onions and potatoes soak about 30 minutes are so. the only thing i added was some salt and garlic powder and pepper, and i did this while it cooked.
    i put the potatoes around the somalian rice (your recipes) and used the onions and raisings for the garnish on top of the somalian rice.
