2 Tbs. olive oil
1 onion; sliced
2 cloves garlic; minced
1/2 cup carrots; sliced
1 300g package of frozen chopped spinach(thawed)
juice of 1/2 lemon
salt and pepper
1. Heat the oil in a pan; add the onions and garlic;and saute until translucent; add the carrots.
2. Add the spinach and cover; simmer for 15 minutes.
3. Add the salt, pepper, and lemon; cook for 2 minutes.
