1 lbs. fish; cut into 1 inch pieces
2 Tbsp. olive oil
1 med. onion; sliced
5 roma or plum tomatoes; chopped
1 chili; chopped
1 ts. garlic; minced
1 ts. lime juice
1 Tbsp. basil; chopped
1. Heat the oil in a pot, add the onions and saute.
2. Add the tomatoes and chili; cook covered until the tomatoes are soft (around 15 minutes).
3. Add the salt, garlic, and lemon juice, then mash with a wooden spoon.
4. Add the fish and basil; cover and cook for 5 - 8 minutes.
