Ginger Refresher
You have to REALLY like fresh ginger to enjoy this juice.

2 inch piece of ginger; peeled and finely chopped.
1/2 Tbsp lemon rind
5 c. boiling water
2 Tbsp. fresh lemon juice, or to taste
4 Tbsp. sugar, or to taste
1. Put the ginger and the lemon rind in a heatproof bowl.
2. Carefully cover with the boiling water.
3. Stir and let sit overnight.
4. Strain the liquid into a large pitcher.
5. Stir in the lemon juice and sugar.
You might want to use a little less ginger. Mine was QUITE strong.
