  3. hey try this cake,
    Ingredients

    * 250 grams salt reduced margarine or butter
    * 250 grams sugar
    * 4 eggs
    * juice of ½ a lemon
    * lemon zest of a whole lemon
    * 1 teaspoon vanilla essence
    * 400 grams self-rising flour
    * 150 millilitres cream
    * food colouring (Queen rainbow food colours)

    Instructions
    Preheat oven to 180 degrees C and place rack in the centre of the oven.

    Use a greased with flour covered baking pan and set aside.

    Mix margarine and sugar beat until light and fluffy. Add eggs, one at a time, beating well after each addition. Add lemon juice, lemon zest and vanilla essence. With mixer on low, add the flour and cream just until batter is smooth.

    Now equally divide batter and place into 3-4 bowls. Add food colouring to the individual batter of your choice. You may like to add 1 tablespoon of cocoa in one of the batter like did.

    Use a soup spoon fill it up with batter one colour at the time and place it in the middle of the baking pan layering on top of each until all batter is used.

    Bake about 60 minutes, or until a toothpick inserted in the centre comes out clean. Place some alfoil on top of the cake for the last 15 minutes.

    If desired garnish the cake with icing sugar, with food colouring of your choice.
